My all time fav SUGAR FREE treat! Chocolate Peanut Butter Bites! They are delicious.
I make these treats about every other week, due to my begging dad who doesn't eat sugar lol. He LOVVVES them!
INGEDIENTS
6 Tbsp coconut oil, divided
1/4 cup + 2 Tbsp peanut butter, divided
1/4 cup + 1 Tbsp honey (or maple syrup, agave, etc.), divided
1/4 cup dark coca powder
1 cup rolled oats
1 tsp vanilla extract
1 pinch salt
DIRECTIONS
- Place 9 cupcake liners into a muffin tin (or 18 mini cupcake liners)
- In a small saucepan over low heat melt 5 tbsp coconut oil, 2 tbsp peanut butter, 1/4 cup honey, 1/4 cup coca powder, 1 tsp vanilla, and a pinch of salt. Mix until combined
- When fully combined, remove from the heat & stir in 1 cup rolled oats.
- Spoon into cupcake liners. Refrigerate while making the sauce.
- In a small sauce pan over low heat stir together 1/4 cup peanut butter, 1 tbsp honey, 1 tbsp coconut oil.
- Spoon the warm mixture over the refrigerate oat mixture.
- Freeze for 15 minutes to set. Store in refrigerator.
