Almond Honey Granola


I LOVE granola! But let's be honest, who doesn't?? It is absolutely heavenly. Not only do I love granola, but I LOVE this almond honey granola recipe. My taste buts go crazy for this stuff. It is the best ever!

 I make this recipe weekly. We throw it on just about everything! It goes perfectly with yogurt, acai bowls, ice cream, mixed with cereal, and the list goes on.



INGREDIENTS
2 1/2 cups old fashioned oats
3/4 cup almonds
1/2 cup honey
1/2 tsp cinnamon
1/4 cup melted coconut oil
1/2 tsp almond extract
1 Tbsp vanilla extract
pinch of salt

DIRECTIONS
  1. Preheat oven to 300 F. Line a baking sheet with parchment paper.
  2. Toss oats, almonds, cinnamon, and salt in a large bowl. Set aside.
  3. In a medium size bowl, whisk honey and melted coconut until combined. Add almond and vanilla extract.
  4. Pour mixture into the large bowl. Mix until all the oats are coated.
  5. Spread onto parchment paper sheet.
  6. Bake for 15-20 min - but keep a close eye on it! Stir oats around every 7-8 min while it's baking.
  7. When you take the granola out of the oven, it will not be completely hardened! Leave them out to cool and the air will help the granola obtain the crunchy texture!
