Ice cream sandwiches

Sometimes you just need a cold dessert to fight the summer heat! And ice cream sandwiches are the perfect dessert! Ice cream sandwiches with cake cookies & enlightened ice cream... um YUM! Super easy to make and assemble:)) 

INGREDIENTS
1 cake mix (I used fun-fetti cake mix)
2 eggs
1/3 cup vegetable oil
3 pints enlightened ice cream (I used red velvet)
sprinkles

DIRECTIONS

1. Preheat oven to 350 degrees F.
2. Add cake mix, eggs, and vegetable oil into a bowl. Mix until combined.
3. Roll dough into 1-2 inch balls. Bake for 8-10 minutes.
4. Let the cookies cool for 15-20 minutes.
5. Find two cookies that are about the same size. Add a scoopful of ice cream between the cookies. Roll in sprinkles if you're feeling fancy;)
6. Enjoy your yummy easy ice cream sandwich!!
