Fresh Peach Pie!!
To be honest, I am usually not a big fan of pie, especially if it has fruit on it, but DANG! This was a game changer! Fresh Peach Pie is seriously amazing!
So let me tell ya why this is so DANG good! On the bottom layer we have a crispy graham cracker pie crust, with a fluffy layer of cream on top, and sweet peach pure to top it all off! You are going to LOVE this!
Serves 4-6
INGREDIENTS
CRUST:
2 packs (little less than 3 cups) graham crackers, crushed
1 1/2 sticks of butter, melted
3 tbsp powder sugar
CREAM FILLING:
1 cup powder sugar
4 oz cream cheese (1/2 brick), soften at room temperature
1 tsp vanilla
1 tbsp fresh lemon juice
2 tbsp milk
PEACH SAUCE:
1-2 medium peaches, peeled and sliced
1/4 cup water
1/2 cup sugar
1/2 tbsp lemon juice
1 tbsp corn starch
FRESH PEACHES:
4-6 medium peaches, peeled and sliced

CRUST:
- Combine crushed graham crackers (I place mine in a food processor and I like to pulse them not totally fine, but just a little coarse), melted butter, and powder sugar.
- Mix well (or pulse together in food processor).
- Press into bottom of a 9 inch pie plate. *If the crust is having a hard time holding together, you may need a little more melted butter.*
CREAM FILLING:
- Whisk heavy cream until it form medium to stiff peaks, set aside.
- Mix together in a standard mixer with paddle attachment room temperature cream cheese, powder sugar, lemon juice, vanilla extract, and milk.
- Mix until well combined.
- Carefully fold the cream cheese mixture into the whipping cream, and layer unto the bottom half of graham cracker crust.
- Let it set in the fridge. *you may have a little extra cream cheese filling*
PEACH SAUCE:
- In a blender add peaches, water, lemon juice, corn starch, and sugar.
- Blend together well, until smooth.
- Pour mixture into a small saucepan and bring to a boil.
- Whisk until the sauce thickens (careful not to it).
- Remove from heat, and allow to cool in the fridge.
PEACHES:
- Place the sliced peaches in a bowl.
- Cover with sauce just until well coated.
- Spoon the peach mixture over the cream cheese later.
- Allow to set in the fridge for a few hours.
- Now it ready to serve!
