Healthy, quick, gluten-free, vegan oatmeal! Blueberry Peach Oatmeal is a healthy and flavorful bowl loaded with fiber, healthy fats and protein! This super yummy bowl of oats will keep you full and energized all morning:)
I know this isn't your typical summer breakfast, but peach season is in session and we need to take advantage of fresh peaches! Cold fresh peaches and blueberries complement the oatmeal very well. Warm soft chewy oatmeal combined with cold juicy fruit taste divine! And I can't forget to mention the nut butter gives an amazing final touch!
I know this isn't your typical summer breakfast, but peach season is in session and we need to take advantage of fresh peaches! Cold fresh peaches and blueberries complement the oatmeal very well. INGREDIENTS
1/2 cup old fashioned oats (gluten free if needed)
1 cup almond milk
1 cup fresh peaches, chopped into small chunks and divided
1/2 cup blueberries, divided
1/2 tsp vanilla extract
1/4 tsp cinnamon
1/2 tbsp ground flaxseed
1 tbsp almond butter (or other nut butter)
DIRECTIONS
- Add oats, water, 1/2 cup peaches, 1/4 cup blueberries, vanilla, and cinnamon into a small saucepan.
- Cook over medium heat for 5-6 minutes, or until oats have thickened to the consistency you like.
- Spoon into a serving bowl. Top with remaining peaches, blueberries, ground flaxseed, and nut butter. Enjoy!
