Instant Pot Vegetable Quinoa Bowl for Two



Vegetable Quinoa Bowls are a easy healthy meal to throw together during the busy week! Little time involved, simple, and you can literally fill your bowl with whatever you want! Not only do I love this meal, but I love using my instant pot to make it. I recently bought an instant pot, and it is a GAME CHANGER, i'm obsessed! Never cooking vegetables on the stove again! Step to step direction to cooking this meal in the instant pot below:)



INGREDIENTS
1 small sweet potato
1 carrot
1 cup broccoli 
2 eggs
1 lime
1 avocado
1 cup quinoa/ brown rice mix, rinsed
 water
juice from half a lemon

DIRECTIONS
Instant Pot 1 minute Quinoa/ brown rice:
  1. Rinse the quinoa/brown rice well. Soak overnight in filtered water with 1 tbsp lemon juice. Drain in fine-mesh sieve. Rinse well with water (This step will help you to digest the quinoa better.)
  2. Add the quinoa/ brown rice, lemon juice, salt, and 1 1/2 cup water into your instant pot.
  3. Close and lock the lid. Press [manual] and then use the [-] button to choose 1 minute of pressure cooking time.
  4. When the time is up allow it to go for 10 minutes more. Release pressure value, open and serve into two bowls.

Instant Pot 2 minute steamed vegetables:
  1. Trim and peel skin from sweet potato, carrot, and broccoli. Slice into desired shape/ size.
  2. Place the vegetables into the steamer basket on the rack.
  3. Pour 1/2 cup water over the vegetables.
  4. Close and lock the lid. Press steam and the [-] button to choose 2 minutes of pressure cooking time.
  5. Use quick pressure release to quickly release pressure.

Perfect Easy over eggs:
  1. Heat pan over medium high heat, about 1-2 minutes.
  2. Crack egg into pan. Let cook until white semi-set.
  3. Add 2-3 tbsp water to pan and cover with lid. Let cook about 30 seconds or until the white is completely set. (jiggle the pan to test if the white has set)
  4. To cook the egg medium well, leave lid on and add a bit more water. Add another 30 seconds.

Assembling bowl:
  1. Place the quinoa/ brown rice, steamed vegetables, and egg into a bowl.
  2. Slice avocado and lime to place on top of bowl.
  3. Season with salt, pepper, and desired sauces & seasonings.


Notes:
  • To re-heat place the leftover quinoa/ brown rice mixture in a fine mesh sieve and put it in a pot of simmering water to steam until warm.
  • Feel free to add more/ less vegetable, and sauces!
